Mexican Rice

  • 2 cups Long grain rice washed and drained
  • 1 no Chicken cut into medium sized pieces, medium
  • 1 tsp Garlic ground to a paste
  • 2 nos Tomatoes finely chopped
  • 1 1/2 tbsp Chilly powder
  • 4 cups Chicken stock
  • Pepper powder As reqd
  • 4 tbsp Oil
  • Salt As reqd


  • For preparing Mexican rice, heat oil in a pan and stir fry the chicken pieces in high flame till well browned. Remove and keep it aside.
  • In the same oil, fry the onions, garlic, chilly powder and salt for 5 minutes.
  • Add in the rice, fried chicken pieces, pepper and the stock.
  • Stir well and cook till almost done.
  • Then stir in the tomatoes and cook over a low flame until the rice is completely cooked.
  • Mexican rice is ready. Serve hot.
