Egg Roll Cutlet

Eggs are made into omelettes and a chutney is spread over it

Ingredients
  

  • 3 nos Eggs
  • 1/2 tsp Pepper powder
  • 1 inch Ginger
  • 1 cup Coconut grated
  • 3 nos Green chillies finely chopped
  • 1 tbsp Coriander leaves finely chopped
  • 1 tbsp Mint leaves
  • 1 tsp Lemon juice
  • 1/2 cup All purpose flour Maida
  • Bread crumbs As reqd
  • 1/2 tsp Chilly powder
  • Water As reqd
  • Oil As reqd
  • Salt As reqd

Instructions
 

  • For preparing egg roll cutlet, beat eggs, pepper and salt.
  • Grind coconut, green chilly, ginger, coriander leaves and mint leaves. Keep this chutney aside.
  • Mix it with lemon juice and salt.
  • Heat 1 tbsp oil in a pan and fry half of the egg mixture to make an omelette.
  • Spread half of the ground chutney on the omelet.
  • Roll the filled omelet before it cools.
  • Slice this roll into few pieces.
  • Repeat the process.
  • In a bowl mix in chilly powder, maida, salt and a bit of water.
  • Dip the egg rolls in this paste and then roll it in bread crumbs.
  • Fry it in hot oil.
  • Egg roll cutlet is ready. Serve hot.
