Tasty Fruit Cake

Ingredients
  

  • 250 g All purpose flour sifted, Maida
  • 90 g Raisins Unakka munthiri
  • 50 g Currants
  • 50 g Candied lemon and orange peel finely chopped
  • 125 g Softened butter
  • 100 g Sugar
  • 3 nos Eggs
  • 1 packet Vanilla sugar
  • 5 g Baking powder
  • 5 tbsp Milk

Instructions
 

  • For preparing tasty fruit cake, preheat the oven at 180 degrees celsius.
  • Grease a bread tin with butter and line it with grease proof paper.
  • In a bowl mix in raisins, currants, 1 tbsp of maida, candied lemon and orange peel.
  • Beat the butter and sugar well in another bowl.
  • Add in eggs and beat it again.
  • Then pour in the milk. Add in the remaining maida and baking powder. Mix well.
  • Toss in the fruits and mix well.
  • Pour the mixture in the baking tin and bake it for 1 hour and 15 minutes.
  • Leave it out on a rack to cool, turn it over and cut it.
  • Tasty fruit cake is ready. Serve when it becomes room temperature.
