250 g All purpose flour (sifted, Maida)90 g Raisins (Unakka munthiri)50 g Currants50 g Candied lemon and orange peel (finely chopped)125 g Softened butter100 g Sugar3 nos Eggs1 packet Vanilla sugar5 g Baking powder5 tbsp Milk For preparing tasty fruit cake, preheat the oven at 180 degrees celsius.Grease a bread tin with butter and line it with grease proof paper.In a bowl mix in raisins, currants, 1 tbsp of maida, candied lemon and orange peel.Beat the butter and sugar well in another bowl.Add in eggs and beat it again.Then pour in the milk. Add in the remaining maida and baking powder. Mix well.Toss in the fruits and mix well.Pour the mixture in the baking tin and bake it for 1 hour and 15 minutes.Leave it out on a rack to cool, turn it over and cut it.Tasty fruit cake is ready.
