Vanilla Cake - Old fashioned method moist cake

- Butter - 175 gms
- Castor sugar - 175 gms
- All purpose flour - 175 gm
- Baking powder - 1 tsp
- Vanilla Essence - 1 tsp
- Eggs - 3 nos
- Salt(a pinch) -

Instructions
- Pre-heat the oven to 350 F, grease an 8' cake pan with little butter.
- Put all the ingredients in a large mixing bowl and beat with a wooden spoon or an electric mixer for 1 minute, or until just combined. :- Do not over beat the batter.
- Spoon the mixture into the tin, level the top and bake on the middle shelf of the oven for about 40-45 minutes.
- The cake is cooked when it springs back when lightly touched with a finger tip.
- It should be golden in colour and well risen.
- Let the cake sit in the tin for 5 minutes, then turn the cake out onto a wire rack to cool.
