For preparing delicious vegetable kuruma, boil the potato and remove skin and cut into small pieces.
Take a pan and add carrot, beans and green peas with required salt and water. Half cook the veggies.
Add the potato and mix well.
In another pan, heat oil and add onion and green chillies. SautT for few minutes.
Then add in ginger-garlic paste, turmeric powder, coriander powder and garam masala.
After it cools, grind the mixture with cashew nuts till it becomes a smooth paste and add it to the vegetables. Mix well and allow to boil for 5 minutes.
Then pour in the coconut milk. When it boils, add in the coriander leaves and switch off the flame.
Delicious vegetable kuruma is ready. Serve with appam or chappathi
