  • For preparing delicious vegetable kuruma, boil the potato and remove skin and cut into small pieces.
  • Take a pan and add carrot, beans and green peas with required salt and water. Half cook the veggies.
  • Add the potato and mix well.
  • In another pan, heat oil and add onion and green chillies. SautT for few minutes.
  • After it cools, grind the mixture with cashew nuts till it becomes a smooth paste and add it to the vegetables. Mix well and allow to boil for 5 minutes.
  • Then pour in the coconut milk. When it boils, add in the coriander leaves and switch off the flame.
  • Delicious vegetable kuruma is ready. Serve with appam or chappathi
