Vazhuthananga Mezhukkupuratti | Brinjal Stir Fry

Ingredients
  

  • 6 nos Brinjal Sliced
  • 1 tsp Mustard seeds
  • 100 g Shallots kunjulli
  • Curry leaves Few
  • 10 nos Dry Red Chillies
  • 3/4 tsp Turmeric powder
  • Coconut oil As reqd

Instructions
 

  • For preparing Brinjal Stir Fry, first heat some coconut oil in a pan. Splutter mustard seeds and add curry leaves.
  • Coarsely grind shallots, chillies, salt and turmeric.
  • Add it to the pan and fry well.
  • Add sliced brinjal and fry well. Cover with a lid and cook in low flame adding some water if required.
  • Remove the lid when done and add some more oil and fry well.
