Instructions
For preparing Brinjal Stir Fry, first heat some coconut oil in a pan. Splutter mustard seeds and add curry leaves.
Coarsely grind shallots, chillies, salt and turmeric.
Add it to the pan and fry well.
Add sliced brinjal and fry well. Cover with a lid and cook in low flame adding some water if required.
Remove the lid when done and add some more oil and fry well.
