Potato And Beetroot Stir Fry

Ingredients
  

  • 3 nos Potato cubes
  • 1 no Beetroot cubes
  • 1 no Onion chopped
  • 3 nos Green chillies
  • 1 tsp Fennel seeds Perumjeerakam
  • Ginger garlic paste - 2 tsp
  • 1 cup Cilantro chopped
  • 1 tsp Coriander powder
  • 1 tsp Garam masala
  • Salt As reqd
  • 1/2 tsp Fenugreek seeds Uluva

Instructions
 

  • For preparing potato and beetroot stir fry, boil some water with salt. Add potato and beetroot. Cook well(do not over cook it). Drain and keep aside.
  • In a pan, heat oil. Add fennel seeds, fenugreek seeds and garam masala and ginger-garlic paste. Add the cooked potato and beetroot in to it and fry well,
  • Add coriander powder and sprinkle little salt.
  • Add onion, green chillies and cilantros.
  • Mix very well. When all the spices are coated well, remove from flame.
  • Serve this as a side dish for chappathi as well as curd rice.
  • Potato and beetroot stir fry is ready.
