Ingredients
  

  • 4 cups Brown rice Kuthari
  • Coconut milk of 1 coconut
  • 2 cups 1st milk
  • 6 cups 2nd milk
  • 1/2 cup Coconut grated
  • 1/4 tsp Cumin seeds Jeerakam
  • 1/2 tsp Fennel seeds Perum jeerakam
  • 1 no Cinnamon Karugapatta
  • 2 nos Cardamom Elakka
  • 2 nos Cloves Grambu
  • 1/2 cup Red onion chopped
  • 1/4 cup Oil
  • 2 branch Curry leaves
  • Salt As reqd

Instructions
 

  • For preparing nadan coconut rice, first cook the rice in the 2nd coconut milk.
  • When the milk drains add the 1st milk.
  • Grind the ingredients coconut, cumin seeds, cinnamon, cardamom, cloves and fennel seeds. Add it to the rice and mix well. Add salt as required.
  • Heat oil in a pan, fry red onion and curry leaves. Add this mixture to the rice and mix well.
  • Serve hot.
  • Nadan coconut rice is ready.
