Cut the spinach and mushroom into very small pieces and keep separately.
Boil about 1/2 glass water and put the mushroom in this water and let it boil till cooked. The water should get absorbed.
Grind coconut, onion, garlic, ginger, turmeric powder, cumin seeds and 5 curry leaves to a coarse paste.
Mix together spinach, cooked mushroom and coconut mixture. Add salt as required.
Heat a kadai, add oil and splutter mustard seeds. Put curry leaves. Then add the spinach-mushroom-coconut mixture. Cover and wait until cooked.
Spinach with mushroom thoran, a tasty as well as nutritious dish, is ready. Serve warm.
Tip: Always make sure to clean and boil mushroom first before adding to any curry or fry. If not cooked properly, you might get a stomach upset. Choose healthy white mushrooms, not old shriveled, worn out and discolored mushrooms.
