Ridge Gourd With Shrimp

Spicy shrimp curry with ridge gourd

Ingredients
  

  • 500 g Ridge gourd
  • 1 kg Shrimp
  • 1 cup Tomatoes chopped
  • 250 ml Refined oil
  • 1 tbsp Red chilly powder
  • 6 nos Green Chillies slit
  • 1/2 tsp Turmeric powder
  • 1 tsp Mustard seeds
  • 2 cups Onions finely chopped
  • Ginger garlic paste - 2 tsp
  • 1 cup Onion Paste
  • Salt As reqd
  • 1 cup Coriander leaves finely chopped

Instructions
 

  • Peal and clean the Shrimps. Wash and drain well.
  • Peal and remove the husk of ridge gourd and cut into small pieces.
  • Put a deep bottomed pan on the stove. Add oil and heat. Splutter mustard seeds. Add the onion paste and fry for a few minutes. Add chopped onion and fry until the contents turn brown.
  • Add the prawns and fry further. Add red chilly powder, green chillies, turmeric powder, ginger-garlic paste and the ridge gourd pieces and fry. Add the tomato pieces, mix well and finally add salt. Again mix thoroughly.
  • Add enough water, cover the pan with a lid and allow to simmer in medium flame until the prawns and ridge gourd pieces are cooked well and the oil gets separated.
  • Top the preparation with finely chopped coriander leaves and serve hot with rice or chappathis.
