Teasel Gourd (Aakaakarakai) Fry

Ingredients
  

  • 500 g Teasel gourd
  • 1 cup Onion chopped
  • 2 nos Green chillies split
  • 1 tsp Red chilly powder
  • 1 tsp Mustard seeds
  • 1 tsp Coriander seed powder
  • 200 ml Refined oil
  • 2 sprigs Curry leaves
  • 1 cup Coriander leaves chopped
  • Salt As reqd

Instructions
 

  • For preparing teasel gourd (Aakaakarakai)fry, cut the tiesel gourds into thin lengthy slices.
  • Put a deep bottomed frying pan on the stove, add some oil and heat.
  • Splutter mustard seeds and fry green chillies and finely chopped onions. Fry until they turn dark brown in color.
  • Add the curry leaves and teasel gourd slices, mix well and fry for a few minutes. Add enough salt and mix well.
  • Add some more oil and fry them stirring constantly until the teasel gourd pieces turn into deep brown.
  • Sprinkle chopped coriander leaves over the preparation and serve hot with rice or pulka or pan cakes.
