Heat oil in kadai, sautT onion till light brown in color.
Add garam masala, red chilly powder, green chilly, curry leaves, coriander leaves, turmeric powder and required salt. Fry well.
Now add mashed potato and yolk and combine well. Allow to cool.
Take the half piece of egg and fill the hollow space with potato masala.
Take a bread slice, dip in water and place the egg inside. Squeeze out excess water and make a covering. Repeat this with remaining egg pieces.
Make a batter(not so thick) by adding water into the maida flour.
Dip the egg in flour batter.
Deep fry the coated eggs in hot oil till golden brown and crispy.

Serve potato coated egg hot with green chutney or sauce.
