For preparing oelan - brahmin special, soak red cow peas in water for about 5 hours before preparation.
Wash vella payar and boil it with 4 cups of water in pressure cooker. Cook ash gourd, pumpkin and green chillies for a few minutes and after boiling add salt.
Add the cooked vella payaru to pumpkin ash gourd mixture and cook for few minutes. Add jaggery.
Add coconut milk. Immediately after adding coconut milk stop cooking. Add coconut oil to the mixture.
