Papaya Cake

Papaya, coconut, jaggery and other ingredients are combined together and baked

Ingredients
  

  • 175 g Raw papaya grated
  • 50 g Pumpkin grated
  • 2 tbsp Coconut grated
  • 125 g Wheat flour
  • 20 g Cashew nuts roasted and broken
  • 10 g Raisins
  • 1/4 cup Nuts
  • 4 tbsp Jaggery powder
  • Cardamom powder A pinch, Elakka
  • Butter As reqd
  • 1 cup Cream
  • 1 cup Milk

Instructions
 

  • For preparing papaya cake, wet the wheat flour with 1/4 cup of luke-warm water. Cover with a wet cloth and keep aside for 10 minutes.
  • Combine the grated papaya and pumpkin with the flour mixture and cover with the same wet cloth and keep aside.
  • Mix the flour mixture with cashew nuts, raisins and jaggery powder.
  • Cook the papaya flour mixture using a double boiler till firm. Let it cool.
  • Place the cake in a butter smeared baking dish. Melt the butter and spread over the cake.
  • Sprinkle the coconut mixture and nuts.Bake for 10 minutes in 350 degree preheated oven. Whisk cream and milk. Spread over the baked cake.
