Diabetic Fudge
Cocoa powder added to milk, sugar substitute and other ingredients

- 1/2 cup Evaporated milk
- 2 tbsp Butter
- 1 1/2 tbsp Cocoa powder
- 2 tbsp Liquid sugar substitute
- 2 tsp Unsweetened chocolate
- 1/2 tsp Vanilla extract
- Cardamom powder A pinch, Elakka
- 2 tbsp Cashew nuts
- 2 nos Egg
- 1 1/4 cup Cracker crumbs
- Salt A pinch
Take a saucepan and combine cocoa powder, unsweetened chocolate with milk. Stir well so that no lumps are formed.
Add butter and liquid sugar substitute to the milk mixture stirring continuously.
Boil the milk mixture and add vanilla, cardamom powder, nuts, 1 cup of cracker crumbs, egg whites and salt. Stir well and allow the mixture to cool.
Make balls out of this and roll in the cracker crumbs. Refrigerate for 1 hour and serve.
Diabetic fudge, a healthy snack for the diabetics, is ready.
