  • 1/2 cup Evaporated milk
  • 2 tbsp Butter
  • 1 1/2 tbsp Cocoa powder
  • 2 tbsp Liquid sugar substitute
  • 2 tsp Unsweetened chocolate
  • 1/2 tsp Vanilla extract
  • Cardamom powder A pinch, Elakka
  • 2 tbsp Cashew nuts
  • 2 nos Egg
  • 1 1/4 cup Cracker crumbs
  • Salt A pinch


  • Take a saucepan and combine cocoa powder, unsweetened chocolate with milk. Stir well so that no lumps are formed.
  • Add butter and liquid sugar substitute to the milk mixture stirring continuously.
  • Boil the milk mixture and add vanilla, cardamom powder, nuts, 1 cup of cracker crumbs, egg whites and salt. Stir well and allow the mixture to cool.
  • Make balls out of this and roll in the cracker crumbs. Refrigerate for 1 hour and serve.
  • Diabetic fudge, a healthy snack for the diabetics, is ready.
