Diabetic Delight
Cooked raisins and dates are added to maida flour, egg, other ingredients and baked as cookies

- 1/2 cup All purpose flour Maida
- 1/2 cup Raisins Unakka munthiri
- 2 tbsp Dates chopped
- 1 no Egg beaten
- 1/4 cup Shortening
- 1 cup Biscuit powdered
- 1/2 tsp Soda powder
- 1/2 tsp Vanilla essence
- 1/2 cup Water
- Salt A pinch
- 1/2 cup Custard
For preparing diabetic delight, first cook raisins and dates in 1/2 cup of water. Boil for 3 minutes.
Add shortening and mix well. Allow it to cool.
Add maida flour, biscuit, beaten egg, soda powder, Custard, vanilla essence and a pinch of salt. Mix well and chill.
Drop onto a cookie tray in small rounds and bake at 350 degrees for 10 minutes.
Diabetic delight, a favorite cookie with kids as well as elders, is ready.
