First cook the soya beans in boiling water for 10 minutes. Drain and squeeze out the water completely.
Shred the cooked soya bean. Keep aside.
Grind coarsely grated coconut with garlic, shallots, cumin seeds, and green chillies.
Heat oil in a pan and splutter mustard seeds and curry leaves. Stir in roughly ground coconut mixture and fry for a minute.
Add ground soya, spinach, carrot, beans and required salt. Cook for 2 minutes with a covered lid.
Remove the lid and stir fry the thoran till there is no trace of water.
Soyabean with veggies, a yummy as well nutritional recipe, is ready.
Note: Its better to add a crushed garlic clove in the water while boiling the soyabean in order to avoid the raw smell of soyabean.
