Soyabean With Veggies Stir Fry

  • First cook the soya beans in boiling water for 10 minutes. Drain and squeeze out the water completely.
  • Shred the cooked soya bean. Keep aside.
  • Grind coarsely grated coconut with garlic, shallots, cumin seeds, and green chillies.
  • Heat oil in a pan and splutter mustard seeds and curry leaves. Stir in roughly ground coconut mixture and fry for a minute.
  • Add ground soya, spinach, carrot, beans and required salt. Cook for 2 minutes with a covered lid.
  • Remove the lid and stir fry the thoran till there is no trace of water.
  • Soyabean with veggies, a yummy as well nutritional recipe, is ready.
  • Note: Its better to add a crushed garlic clove in the water while boiling the soyabean in order to avoid the raw smell of soyabean.
