Chocolate Cake - Festive Special

An attractive lightly spiced chocolate cake

Ingredients
  

  • 1 1/2 cup All purpose flour Maida
  • 125 g Butter melted
  • 250 g Castor sugar/soft brown sugar
  • 4 nos Eggs large
  • 1 bar Chocolate 200g
  • 1 tsp Baking powder level
  • 1/4 tsp Baking soda
  • 1 tsp Vanilla essence
  • 1/2 tsp Cinnamon Karugapatta
  • 5 tbsp Milk

For Icing:

  • Chocolate icing to cover the cake
  • Colored sprinklers/pista

Instructions
 

  • In a bowl, melt chocolate with milk for a minute or more. Blend well.
  • Add melted butter to it and blend again.
  • Sieve together flour, cinnamon, baking and soda powder. Add to the chocolate mixture.
  • Separate the egg yolks from the egg whites.
  • Beat egg yolks with sugar till pale in color. Stir into the chocolate mixture.
  • Whisk the egg whites with a little salt till they are stiff and form peaks.
  • Use a spatula to mix the egg white into the cake mix. Let it stand for 10 minutes.
  • Meantime preheat the oven to 180 C. Grease a medium wide loaf pan.
  • Transfer the batter into the loaf pan and bake. If the top browns quickly, cover with a foil and continue baking till well risen.
  • Cool the cake and spread chocolate icing and colored sprinklers on top. Chill well and enjoy!
