Instructions
For preparing brinjal masala, put the cut brinjal in water.
Now, grind together coriander leaves, green chillies and salt.
Heat oil in a pan and fry the brinjal pieces to a golden brown color.
When the brinjal is half cooked, add the onion, ground paste, curry leaves and cook for 5 minutes. Sprinkle garam masala & saffron powder.
Remove from fire when brinjal is cooked.
Squeeze the lemon piece over the brinjal masala and garnish with corriender leaves. Brinjal masala is ready.Serve hot with chappathi.
