Brinjal Masala Easy

Ingredients
  

  • 75g Brinjal cut in cubes
  • 2 nos Green chillies
  • 1/4 of Lemon
  • Coriander leaves Half a bunch
  • Curry leaves A few
  • 1 no Onion chopped
  • Saffron powder A pinch
  • Garam masala A pinch
  • Salt As reqd
  • Oil As reqd

Instructions
 

  • For preparing brinjal masala, put the cut brinjal in water.
  • Now, grind together coriander leaves, green chillies and salt.
  • Heat oil in a pan and fry the brinjal pieces to a golden brown color.
  • When the brinjal is half cooked, add the onion, ground paste, curry leaves and cook for 5 minutes. Sprinkle garam masala & saffron powder.
  • Remove from fire when brinjal is cooked.
  • Squeeze the lemon piece over the brinjal masala and garnish with corriender leaves. Brinjal masala is ready.Serve hot with chappathi.
