75g Brinjal (cut in cubes)2 nos Green chillies1/4 of LemonCoriander leaves (Half a bunch)Curry leaves (A few)1 no Onion (chopped)Saffron powder (A pinch)Garam masala (A pinch)Salt (As reqd)Oil (As reqd) For preparing brinjal masala, put the cut brinjal in water.Now, grind together coriander leaves, green chillies and salt.Heat oil in a pan and fry the brinjal pieces to a golden brown color.When the brinjal is half cooked, add the onion, ground paste, curry leaves and cook for 5 minutes. Sprinkle garam masala & saffron powder.Remove from fire when brinjal is cooked.Squeeze the lemon piece over the brinjal masala and garnish with corriender leaves.
