Baked Baby Potato In Olive Presto
Baked baby potatoes topped with olive presto and sour cream

- 10 nos Baby potatoes pricked
- 1/4 cup Sour cream
- 1/2 tbsp Olive oil
- Salt As reqd
To make presto sauce:
- Green olives – 3/4 cup(de seeded), de
- 1 tbsp Pine nuts/Chilgoza
- 2 cloves Garlic thinly sliced
- 1 no Onion finely chopped, small
- 1/4 cup Olive oil
For preparing baked baby potato in olive presto, first heat oil in a pan and toss the baby potatoes with required salt.
Transfer the baby potatoes onto a baking dish and bake in a preheated oven at 200ªC for 30 minutes. Cool and keep aside.
Now make the presto sauce by blending together the sauce ingredients : green olives, pine nuts, garlic, onion and olive oil.
Cut in cross shape on top of each potato, squeeze carefully to open and top with olive presto and sour cream.
Baby potato in olive presto, is ready to serve.
