  • 10 nos Baby potatoes pricked
  • 1/4 cup Sour cream
  • 1/2 tbsp Olive oil
  • Salt As reqd

To make presto sauce:

  • Green olives – 3/4 cup(de seeded), de
  • 1 tbsp Pine nuts/Chilgoza
  • 2 cloves Garlic thinly sliced
  • 1 no Onion finely chopped, small
  • 1/4 cup Olive oil


  • For preparing baked baby potato in olive presto, first heat oil in a pan and toss the baby potatoes with required salt.
  • Transfer the baby potatoes onto a baking dish and bake in a preheated oven at 200ªC for 30 minutes. Cool and keep aside.
  • Now make the presto sauce by blending together the sauce ingredients : green olives, pine nuts, garlic, onion and olive oil.
  • Cut in cross shape on top of each potato, squeeze carefully to open and top with olive presto and sour cream.
  • Baby potato in olive presto, is ready to serve.
