First take half of the butter, onion, ginger, garlic and green chillies in a bowl and mix well.
Fry it in a pan.
Allow to cool. Make a fine paste and keep onion mixture aside.
Put this ground paste and remaining butter in the pan. Cook uncovered for 3 minutes until moisture has dried up.
Now add the mixed vegetables, water and required salt.
Cook covered for 7 minutes in 70% power. Stir in between.
Remove bowl from microwave and add coconut milk. Keep stirring. Sprinkle garam masala.
Place the bowl in microwave and cook for 1 minute in 70% power. Do not cook long since coconut milk tends to curdle.
Goan vegetable curry is ready. Garnish with coriander leaves and serve hot with chappati/roti.
