Goan Vegetable Curry

Mixed vegetables cooked with ground onion mixture in a microwave

Ingredients
  

  • 2 cups Mixed vegetables carrot, french beans, green peas, cauliflower, potato
  • 1 no Onion chopped
  • 1 no Green chilly chopped
  • 1/2 inch Ginger piece chopped
  • 1 no Garlic cloves chopped
  • 1 1/2 tbsp Butter
  • 1/2 tsp Garam masala
  • 1 cup Coconut milk
  • 1 tbsp Coriander leaves chopped
  • 1/2 cup Water
  • Salt As reqd

Instructions
 

  • First take half of the butter, onion, ginger, garlic and green chillies in a bowl and mix well.
  • Fry it in a pan.
  • Allow to cool. Make a fine paste and keep onion mixture aside.
  • Put this ground paste and remaining butter in the pan. Cook uncovered for 3 minutes until moisture has dried up.
  • Now add the mixed vegetables, water and required salt.
  • Cook covered for 7 minutes in 70% power. Stir in between.
  • Remove bowl from microwave and add coconut milk. Keep stirring. Sprinkle garam masala.
  • Place the bowl in microwave and cook for 1 minute in 70% power. Do not cook long since coconut milk tends to curdle.
  • Goan vegetable curry is ready. Garnish with coriander leaves and serve hot with chappati/roti.
