Mixed vegetables cooked with ground onion mixture in a microwave

Ingredients
- Mixed vegetables(carrot, french beans, green peas, cauliflower, potato) - 2 cups
- Onion(chopped) - 1 no
- Green chilly(chopped) - 1 no
- ginger piece(chopped) - 1/2 inch
- Garlic cloves(chopped) - 1 no
- Butter - 1 1/2 tbsp
- Garam masala - 1/2 tsp
- Coconut milk - 1 cup
- Coriander leaves(chopped) - 1 tbsp
- Water - 1/2 cup
- Salt(As reqd) -

Instructions
- First take half of the butter, onion, ginger, garlic and green chillies in a bowl and mix well.
- Fry it in a pan.
- Allow to cool. Make a fine paste and keep onion mixture aside.
- Put this ground paste and remaining butter in the pan. Cook uncovered for 3 minutes until moisture has dried up.
- Cook covered for 7 minutes in 70% power. Stir in between.
- Remove bowl from microwave and add coconut milk. Keep stirring. Sprinkle garam masala.
- Goan vegetable curry is ready. Garnish with coriander leaves and serve hot with chappati/roti.
