2 cups Mixed vegetables (carrot, french beans, green peas, cauliflower, potato)1 no Onion (chopped)1 no Green chilly (chopped)1/2 inch Ginger piece (chopped)1 no Garlic cloves (chopped)1 1/2 tbsp Butter1/2 tsp Garam masala1 cup Coconut milk1 tbsp Coriander leaves (chopped)1/2 cup WaterSalt (As reqd) First take half of the butter, onion, ginger, garlic and green chillies in a bowl and mix well.Fry it in a pan.Allow to cool. Make a fine paste and keep onion mixture aside.Put this ground paste and remaining butter in the pan. Cook uncovered for 3 minutes until moisture has dried up.Now add the mixed vegetables, water and required salt.Cook covered for 7 minutes in 70% power. Stir in between.Remove bowl from microwave and add coconut milk. Keep stirring. Sprinkle garam masala.Place the bowl in microwave and cook for 1 minute in 70% power. Do not cook long since coconut milk tends to curdle.Goan vegetable curry is ready. Garnish with coriander leaves and serve hot with chappati/roti. Kerala
