Simple Egg Tomato Curry
Hard boiled eggs cooked in ground onion mixture and masala powders

- 3 nos Hard boiled Eggs shelled and slit
- 1 no Tomato
- 1 no Onions
- 2 nos Garlic cloves
- 1 tsp Red chilly powder
- Turmeric powder A pinch
- 1 tbsp Coriander powder
- Coriander leaves chopped
- Salt As reqd
- 1 sprig Curry leaves
- 1 1/2 tbsp Oil
- 1/4 cup Water
For preparing simple egg tomato curry, first grind together onion, tomato and garlic cloves to a fine paste.
Heat oil in a pan and add curry leaves and the ground paste.
Fry for 2 minutes until the oil seperates.
Add the powder ingredients: red chilly powder, turmeric powder, coriander powder and required salt.
Add 1/4 cup of water and allow it to boil with a covered lid.
Add hard boiled eggs into the gravy and cook it covered for 5 minutes on low heat till the gravy acquires a required consistency.
Garnish the simple egg tomato curry with chopped coriander and serve hot with chappathis/roti.
