Goan Sannas

Rice is ground with toddy and allowed to ferment before steaming in idli moulds

Ingredients
  

  • 125 g Rice
  • 1/2 of Coconut ground
  • 1/2 bottle Toddy
  • Salt As reqd
  • Sugar As reqd

Instructions
 

  • First wash and soak rice overnight.
  • Grind rice with toddy(as required) to a fine batter.
  • Grind grated coconut and add to rice batter. Add 2 tbsp of sugar and some salt.
  • Cover and keep in a warm place for about 3 hours until the batter becomes double the quantity.
  • Pour the batter into saucers or idli moulds and steam for 20 minutes.
  • A typical Goan sannas, soft and fluffy in nature, is ready.
