Goan Sannas
Rice is ground with toddy and allowed to ferment before steaming in idli moulds

- 125 g Rice
- 1/2 of Coconut ground
- 1/2 bottle Toddy
- Salt As reqd
- Sugar As reqd
First wash and soak rice overnight.
Grind rice with toddy(as required) to a fine batter.
Grind grated coconut and add to rice batter. Add 2 tbsp of sugar and some salt.
Cover and keep in a warm place for about 3 hours until the batter becomes double the quantity.
Pour the batter into saucers or idli moulds and steam for 20 minutes.
A typical Goan sannas, soft and fluffy in nature, is ready.
