Vegetable Tikka Masala

A variety of veggies are cooked in a mixture of ground masala consisting of yogurt, ginger, garlic, lemon juice and other ingredients

Ingredients
  

  • 1/4 cup Mushrooms
  • 1/4 cup Cauliflower
  • 1/4 cup Peas
  • 1/4 cup Potato
  • 1/4 cup Carrot
  • 1 no Onion chopped
  • 1 can Tomato puree
  • Ginger chopped
  • 2 nos Garlic cloves chopped
  • 1/4 tsp Red chilly powder
  • 1/2 tsp Coriander powder
  • Turmeric powder A pinch
  • 1/2 cup Yogurt
  • 1/2 tsp Lemon juice
  • 1 tbsp Oil/butter
  • Coriander leaves chopped
  • 1/4 tsp Pepper
  • Salt As reqd

Instructions
 

  • First blend together yogurt, onion, ginger and garlic to a smooth mixture.
  • Add lemon juice, pepper, required salt to the ground mixture and mix well.
  • Stir in chilly powder, coriander powder, turmeric powder and some coriander leaves to the mixture. Blend until smooth.
  • Heat butter/oil in a pan and saute the ground masala until oil appears on top.Add tomato puree.
  • Stir in chopped veggies and stir well. Add remaining coriander leaves and cook with a covered lid in low flame until the veggies are done.
  • Vegetable tikka masala, a yummy and nutritious recipe is ready. Serve hot with roti, steamed rice etc.
