Vegetable Tikka Masala
A variety of veggies are cooked in a mixture of ground masala consisting of yogurt, ginger, garlic, lemon juice and other ingredients

- 1/4 cup Mushrooms
- 1/4 cup Cauliflower
- 1/4 cup Peas
- 1/4 cup Potato
- 1/4 cup Carrot
- 1 no Onion chopped
- 1 can Tomato puree
- Ginger chopped
- 2 nos Garlic cloves chopped
- 1/4 tsp Red chilly powder
- 1/2 tsp Coriander powder
- Turmeric powder A pinch
- 1/2 cup Yogurt
- 1/2 tsp Lemon juice
- 1 tbsp Oil/butter
- Coriander leaves chopped
- 1/4 tsp Pepper
- Salt As reqd
First blend together yogurt, onion, ginger and garlic to a smooth mixture.
Add lemon juice, pepper, required salt to the ground mixture and mix well.
Stir in chilly powder, coriander powder, turmeric powder and some coriander leaves to the mixture. Blend until smooth.
Heat butter/oil in a pan and saute the ground masala until oil appears on top.Add tomato puree.
Stir in chopped veggies and stir well. Add remaining coriander leaves and cook with a covered lid in low flame until the veggies are done.
Vegetable tikka masala, a yummy and nutritious recipe is ready. Serve hot with roti, steamed rice etc.
