Ladies Finger-Bhindi Anardana Fry

Ladies finger/bhindi/vendakkai/kari bevu anardana fry is prepared by stuffing ladies finger with masala paste and frying

Ingredients
  

  • 250 g Ladies finger trimmed, washed and drained, Vendakka
  • 1 tbsp Pomegranate seed powder Anardana powder
  • 1 no Onion finely sliced
  • 2 tsp Red chilly powder
  • 1/2 tbsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1/4 tsp Garam masala
  • 1/2 tbsp Lemon juice
  • Oil As reqd
  • Salt As reqd

Instructions
 

  • For preparing ladies finger/bhindi/vendakkai/kari bevu anardana fry, first make a deep slit on one side of the ladies finger to make a pocket.
  • Mix together the ingredients: pomegranate seed powder, red chilly powder, coriander, turmeric, garam masala and required salt with 2 tbsp of oil to make a fine thick paste.
  • Stuff the interior of each ladies finger with the masala paste.
  • Heat some oil in a pan and stir fry the sliced onion until golden brown in color.
  • Slide in the stuffed ladies finger and stir fry for 5 minutes turning occasionally to fry evenly.
  • Ladies finger/bhindi/vendakkai/kari bevu anardana fry is ready. Sprinkle lemon juice and serve hot.
