Ingredients
  

  • 4 nos Brinjal/Eggplant medium, Vazhuthananga
  • 1 no Onion small, diced
  • 1 no Tomatoes medium, chopped
  • 1 no Green chilly slit
  • 1/2 tbsp Garlic minced
  • 1/2 tbsp Ginger minced
  • 1 tsp Red chilly powder
  • 1/2 tbsp Coriander powder
  • 1/4 tsp Turmeric powder
  • 1/2 tsp Cumin powder Jeerakam
  • 1/2 tsp Garam masala
  • 4 tbsp Fresh cream
  • Oil As reqd
  • Salt As reqd

Instructions
 

  • For preparing easy baingan bartha, first apply a few drops of oil on the brinjal and bake in a preheated microwave oven for 30 minutes.
  • Allow the brinjals to cool completely and slowly remove the outer skin. Mash the interior flesh thoroughly and keep aside.
  • Heat oil in a frying pan and saute onion, green chilly, garlic and ginger for a few minutes until the onion turns golden in color.
  • Add chopped tomatoes and cook until mashed.
  • Add red chilly powder, coriander powder, turmeric powder, cumin powder and garam masala.
  • Stir in mashed brinjal, fresh cream and required salt.
  • Mix well and cook covered for 10 minutes until the gravy has acquired a thick consistency.
  • Easy baingan bartha is ready. Serve hot and enjoy with rotis, naan or chappathis..
