Mash the interior flesh thoroughly and keep aside.Heat oil in a frying pan and saute onion, green chilly, garlic and ginger for a few minutes until the onion turns golden in color.Add chopped tomatoes and cook until mashed.Add red chilly powder, coriander powder, turmeric powder, cumin powder and garam masala.Stir in mashed brinjal, fresh cream and required salt. Mix well and cook covered for 10 minutes until the gravy has acquired a thick consistency.Easy baingan bartha is ready. Serve hot and enjoy with rotis, naan or chappathis.. North Indian
