Hot And Sour Chicken Soup
A very easy to make soup which can be enjoyed on winter evenings

- 1/2 cup Cabbage shredded
- 1/2 cup Carrot grated
- 1/2 cup Chicken cooked and shredded
- 1/4 cup Spring onions chopped
- 3 1/2 cup Clear vegetable stock
- 2 tbsp Vinegar
- 1 tbsp Soy sauce
- 1/2 tsp Chilly sauce
- 1 tbsp Coriander leaves chopped
- 1 tbsp Cornflour dissolved in 1/2 cup water
- 2 tbsp Oil
- salt As reqd
Heat oil in a wok over high flame. Add cabbage, carrots, chicken, spring onions and stir-fry over a high flame for 2 minutes.
Add the stock, vinegar, soya sauce, chilly sauce, coriander, pepper and salt. Simmer for 2 minutes.
Add the cornflour mixture and boil for 3 to 4 minutes while stirring continuously.
Serve hot garnished with coriander leaves.
