Spicy Egg Vindaloo

Ingredients
  

  • 2 nos Hard boiled eggs shelled and cut in halves lengthwise
  • 2 nos Dry red chillies
  • 1 no Onion finely chopped
  • Ginger A small piece
  • 2 flakes Garlic
  • 1/4 tsp Cumin seeds Jeerakam
  • 1 piece Cinnamon Karugapatta
  • 1/4 cup Vinegar
  • 1/2 tsp Garam masala
  • 1/2 tbsp Sugar
  • 1 1/4 tbsp Ghee
  • Salt As reqd

Instructions
 

  • For preparing spicy egg vindaloo, first grind together red chillies, ginger, garlic and cumin seeds with a little vinegar and salt to taste.
  • Heat ghee in a pan and fry chopped onion until golden in color.
  • Add ground red chilly paste and cinnamon and saute in low heat until oil accumulates on top.
  • Stir in sugar, remaining vinegar and garam masala.
  • Add the eggs and cook till gravy thickens.
  • Spicy egg vindaloo, an apt dish with rice or rotis is ready. Serve hot.
