For preparing Capsicum Dry Fry, first wash the capsicums. Remove the cap from the top of the capsicum and takeout all the seeds. Cut the capsicum into medium pieces.
Chop the onion finely.
Put a kadai on the stove. Add 5-6 tbsp of refined oil. When the oil is mildly hot, add the mustard seeds. After it splutters, add the cumin seeds.
Now add the ginger garlic paste to it. When you get the aroma,add the chopped onion.
When the onion becomes translucent, add the capsicum. Cook the capsicum in a low flame. Do not add water, not even sprinkle water.
When the capsicum changes colour, check if it is half cooked.
Now add the turmeric powder, chilly powder and coriander powder and mix well. Add salt as per your taste.
Keep stirring the capsicum mixture till it is fully cooked. Add another 1 tbsp oil if required. Now add the cumin powder and mix well. Remember to cook in a low flame so that capsicum does not get burnt.
When the capsicum is fully cooked, add the besan flour or rice flour. Mix it well with the cooked capsicum and cook for a minute. Remove from fire.
This is an excellent side dish with sambhar rice, Rasam rice, curd rice and also chappathi.
