For preparing the slightly spicy and delicious dish, first heat oil in a kadai and splutter cumin seeds.
Add diced onions and when it's done partially, add capsicums and saute.
Add turmeric powder, salt, pepper powder and saute.
Add tomatoes and fry.
Wait for 2-3 minutes and finally add coriander powder. Keep sauting in low heat until gravy thickens.

Tips:
Note that there is no need to add water as all these ingredients gets cooked fast and moreover this curry needs to have a slight crunchiness which makes it special.
While cooking capsicum, don't cover kadai with lid, it should be cooked in an open kadai.
This Capsicum Curry can be served as a side dish for rice too and goes well with phulka/roti/chappathi.
