Arabic Falafel

A popular snack of Arab East served with pita bread, chopped lettuce etc.

Ingredients
  

  • 125 g Dried chickpeas Kadala
  • 2 nos Green chillies finely chopped
  • 2 cloves Garlic finely chopped
  • 2 tsp Fresh coriander leaves finely chopped
  • 2 tsp Fresh parsley leaves finely chopped
  • 1/4 tsp Baking soda
  • 1/2 tsp Coriander seeds crushed
  • 1/2 tsp Cumin seeds Jeerakam
  • Oil For frying
  • Salt As reqd

Instructions
 

  • For preparing arabic falafel, first soak dried chickpeas overnight and drain off all water on preceding day.
  • Grind the chickpeas to a fine paste by adding little water. Keep this aside.
  • Grind together green chillies, baking soda, garlic, coriander leaves, parsley leaves, coriander seeds and cumin seeds to a fine paste along with 1 1/2 tsp of chickpeas paste.
  • Add ground parsley mixture to chickpeas paste, add salt and mix well.
  • Pluck off small portions from the dough and make small balls. Flatten each ball with your palm.
  • Heat oil in a frying pan and deep fry falafel to a golden brown color.
  • Arabic falafel, a tasty nutritious evening time snack is ready. Serve hot with pita bread and chopped lettuce.
