125 g Dried chickpeas (Kadala)2 nos Green chillies (finely chopped)2 cloves Garlic (finely chopped)2 tsp Fresh coriander leaves (finely chopped)2 tsp Fresh parsley leaves (finely chopped)1/4 tsp Baking soda1/2 tsp Coriander seeds (crushed)1/2 tsp Cumin seeds (Jeerakam)Oil (For frying)Salt (As reqd) For preparing arabic falafel, first soak dried chickpeas overnight and drain off all water on preceding day.Grind the chickpeas to a fine paste by adding little water. Keep this aside.Grind together green chillies, baking soda, garlic, coriander leaves, parsley leaves, coriander seeds and cumin seeds to a fine paste along with 1 1/2 tsp of chickpeas paste.Add ground parsley mixture to chickpeas paste, add salt and mix well.Pluck off small portions from the dough and make small balls. Flatten each ball with your palm.Heat oil in a frying pan and deep fry falafel to a golden brown color.Arabic falafel, a tasty nutritious evening time snack is ready.
