Cook unakkalari in 2 cups of water and let the water evaporate completely.
Take a pan and pour coconut oil. Heat the oil and splutter mustard seeds. Add cumin seeds, pepper powder, cashew nuts and curry leaves. Saute for a few seconds.
Finally add grated coconut and fry till golden in color.
Stir in cooked unakkalari and mix gently.
Simple coconut rice is ready and serve hot with salad.
