Easy to cook coconut rice recipe

Ingredients
- Short grain rice with bran(Unakkalari) - 1 cup
- Cumin seeds(Jeerakam) - 1/4 tsp
- Pepper powder - 1/2 tsp
- Coconut(grated) - 1 cup
- Cashew nuts(chopped) - 1/4 cup
- Curry leaves(Few) -
- Mustard seeds(Few) -
- Coconut oil(As reqd) -

Instructions
- Take a pan and pour coconut oil. Heat the oil and splutter mustard seeds. Add cumin seeds, pepper powder, cashew nuts and curry leaves. Saute for a few seconds.
- Finally add grated coconut and fry till golden in color.
- Stir in cooked unakkalari and mix gently.
- Simple coconut rice is ready and serve hot with salad.
