Ginger Muffins

Ingredients
  

  • 1 3/4 cup All purpose flour
  • 1 tsp Baking powder
  • 1 tsp Soda bi carb
  • 2 tsp Ginger powder
  • 1 tsp Cinnamon powder
  • 1/4 tsp Nutmeg powder
  • 3/4 cup Brown sugar
  • 2 nos Eggs whisked
  • 1/2 cup Milk or water
  • 50 gm Butter melted
  • 100 gm Crystallized ginger diced
  • 1 tbsp Fresh ginger grated
  • 50 gm Crystallized papaya diced
  • 50 gms raisins
  • 1/4 tsp Salt

Instructions
 

  • Preheat oven to 160 c. Line 12 muffin tin with paper cups.
  • Sift together the flour, cinnamon, ginger, nutmeg, baking powder, soda powder into a deep bowl.
  • In an another bowl add melted butter, brown sugar and eggs and whisk with hand until frothy.
  • Add the butter mixture, fruits and fresh ginger grated to the sieved flour.
  • Add milk or water slowly to the flour mixture and mix until the ingredients are just combined. :- Do not over beat the batter. The batter should be moist and hold together.
  • Spoon the batter into the paper cups and bake for 20 -25 minutes or until done.
  • Fill the paper cups with batter till 3/4th full.
