Kerala Beef Fry

Ingredients
  

  • 1 lbs Beef cubed
  • 2 nos Onions large size
  • 1 bulb Garlic
  • 2 inches Ginger
  • 4 stalks Curry leaves
  • 1 tbsp Mustard seeds
  • 2 tbsp Coriander
  • 1 tsp Turmeric
  • 1 tbsp Chili powder
  • 1 tbsp Garam masala
  • Cilantro as reqd
  • 1 tbsp Vinegar
  • Salt as reqd
  • Water as reqd
  • 2 tbsp Olive oil
  • 1 tsp Coconut oil for flavoring

Instructions
 

  • Marinate beef cubes in a little vinegar.
  • Chop up onions, garlic, and ginger.
  • In a huge pot, heat 1 tbsp of olive oil and add mustard seed until they pop.
  • Add onions, garlic, ginger, and curry leaves to this and cook until nicely browned.
  • Add coriander, turmeric, chili powder, garam masala, and salt. Fry for at least 5 minutes.
  • Add beef and 2 cups of waters. Bring to a boil, cover, and turn heat to low to simmer. Stir occasionally.
  • After approximately one hour, check tenderness of beef and add water if necessary.
  • During this time, fry up other half of onions, garlic, and ginger with mustard seeds, curry leaves and keep aside.
  • Once beef is as tender as desired, add fried onions and coconut oil to mixture with cilantro and cook for about 2 minutes.
