Tamil Nadu Diamond Cuts

A snack made with maida and jaggery

Ingredients
  

  • 200 gm Maida
  • 300 gm Jaggery
  • 1/2 cup Water
  • 2 nos Egg
  • 1/4 tsp Elaichi powder
  • 1/4 tsp Baking powder
  • 1 tsp Salt
  • Oil to fry

Instructions
 

  • Kneed maida well and remove any lumps and add salt and baking powder.
  • Beat egg and mix it well with maida.
  • Add 200ml of warm water and 2 tsp of oil and make it a smooth dough.
  • Make small balls and spread it to thin sheets like chappatti.
  • Cut it into pieces by longitudinal and horizontal lines at about 1 inch in length and breadth.
  • Deep fry it in oil till golden brown in colour and keep it aside.
  • Boil jaggery in water and drain it to remove sediments.
  • After removing sediments add cardomom and boil it till 3 strings appear in the spoon. :- or else till the liquid is thick that it does not flow properly.
  • Add the fried diamond cuts into it and mix well.
  • Now transfer it to a greased plate.
