Tomato-Egg Curry

Simple side dish for chapathi

Ingredients
  

  • 2 tbsp Oil
  • 3 nos Onion chopped, big size
  • 5 nos Tomato chopped
  • 4 nos Eggs
  • 1 tsp Chilly powder
  • 1/2 tsp Garam masala
  • Curry leaves a few
  • Coriander leaves a few
  • Salt to taste

Instructions
 

  • Boil the eggs and remove their shells.
  • Heat oil in a pan and add chopped onions and curry leaves.
  • Saute until onion turns golden brown.
  • Add chopped tomatoes, salt and cook till the tomatoes are done.
  • Add chilly powder and garam masala.
  • Saute them for few minutes and check for salt.
  • Cut the boiled eggs into small pieces and add to the above curry.
  • Mix the eggs well till the masala gets coated to the eggs.
  • Garnish with finely chopped coriander leaves and serve.
