Heat up a cooker.
Add ghee and fry cardamom, cinnamon, cloves and bay leaf.
Add water.
When water boils, add coconut milk, onion, ginger, rice and required salt.
When it gives a boil, close the cooker and remove after 5 mins from stove.
After 5 mins, open the lid and carefully remove and dispose the ginger, spices and onion from the rice.
Let the rice cool and your coconut milk rice is ready.
:- Serve with spicy curry, chicken curry or egg masala.
:- Best with dried anchovies sambal, one spicy ommelate and few slices of cucumber.
