Tamil Nadu Egg Masala

Ingredients
  

  • 4 Eggs boiled and cut into two
  • 4 nos Onion finely chopped
  • 4 nos Tomato finely chopped
  • 4 nos Garlic pods finely chopped
  • 4 tsp Chilli powder
  • 1 tsp Turmeric powder
  • Curry leaves A few
  • Salt As reqd
  • 100 ml Oil

Instructions
 

  • Heat a non stick pan and add oil.
  • Add garlic and onion.
  • Fry it well to golden brown.
  • Add tomato, salt, turmeric, curry leaves and chilli powder.
  • Cover and cook for 5 mins.
  • :- Do not add water. The content should shrink.
  • Add eggs and remove from stove.
  • :- Instead of boiled egg, egg omelette can also be used
  • :- Goes well with rice varieties.
