Eggplant Thovayal

Ingredients
  

  • 2 nos Red chillies
  • 1 no Onion small
  • 2 nos Tomato plum
  • 3 - Garlic pods
  • 1 or Coriander leaves
  • 1/2 tsp Turmeric powder
  • 5 nos Eggplants small
  • Oil As reqd
  • Salt As reqd

For seasoning:-

  • Mustard seeds
  • Black gram(Uzhunnuparippu/Urad dhal)
  • Curry leaves

Instructions
 

  • Heat 2 tbsp of oil in a pan.
  • Fry red chillies.
  • Add chopped onion and garlic.
  • Add tomatoes and coriander leaves.
  • Saute it often and cover it.
  • Cut eggplant into small pieces and put this in a bowl and microwave it for 2 - 3 mins.
  • Add this to onion mixture and fry it very well untill the smell goes.
  • Add salt and turmeric powder and switch off the stove and let it cool.
  • Grind this mixture coarsely(not fully).
  • In a separate pan, add 1 tbsp of oil and splutter mustard seeds and urad dhal.
  • Add curry leaves and saute.
  • Pour this to egg plant thovayal and stir it.
  • :- Serve for rotis, variety rice or dosai.
