Heat 2 tbsp of oil in a pan.
Fry red chillies.
Add chopped onion and garlic.
Add tomatoes and coriander leaves.
Saute it often and cover it.
Cut eggplant into small pieces and put this in a bowl and microwave it for 2 - 3 mins.
Add this to onion mixture and fry it very well untill the smell goes.
Add salt and turmeric powder and switch off the stove and let it cool.
Grind this mixture coarsely(not fully).
In a separate pan, add 1 tbsp of oil and splutter mustard seeds and urad dhal.
Add curry leaves and saute.
Pour this to egg plant thovayal and stir it.
:- Serve for rotis, variety rice or dosai.
