Ingredients
- Red chillies - 2 nos
- Onion(small) - 1 no
- Tomato(plum) - 2 nos
- Garlic pods - 3 -
- Coriander leaves - 1 or
- Turmeric powder - 1/2 tsp
- Eggplants(small) - 5 nos
- Oil(As reqd) -
- Salt(As reqd) -
For seasoning:-
- Mustard seeds -
- Black gram(Uzhunnuparippu/Urad dhal) -
- Curry leaves -

Instructions
- Heat 2 tbsp of oil in a pan.
- Fry red chillies.
- Add tomatoes and coriander leaves.
- Saute it often and cover it.
- Cut eggplant into small pieces and put this in a bowl and microwave it for 2 - 3 mins.
- Add this to onion mixture and fry it very well untill the smell goes.
- Add salt and turmeric powder and switch off the stove and let it cool.
- Grind this mixture coarsely(not fully).
- In a separate pan, add 1 tbsp of oil and splutter mustard seeds and urad dhal.
- Add curry leaves and saute.
- Pour this to egg plant thovayal and stir it.
- :- Serve for rotis, variety rice or dosai.

hi The recipe was really delicious. But there could be some vegetables to bite into.. so may be, u could divide the portion n just mash one half of it.
